Kai Market @ the Sheraton Waikiki


Last week I had dinner with my parents at the Kai Market, located ocean front at the Sheraton Hotel, Waikiki.  The Hawaiian contemporary decor of Kai opens to an open lanai, ocean front, with live bands, and hula and fire dancers.  The buffet had a variety of seafood from shrimp to clams and fresh fish.  I tried the fresh bok choy, some macadamia nut crusted lamb chops with mint jelly, and the prime rib as well.   The desert Bar was fabulous.  I had a custard with a sweet jelly like garnish that looks like Ikura (large fish eggs), and mango pudding.  They had a variety of delicious deserts from fresh chi chi dango mochi or coconut crusted daifuku (azuki bean mochi), and portuguese sweet bread pudding, key lime pie, coconut tapioca, and chocolate haupia pie and trifles.  All the seafood went well with the Sauvignon Blanc I ordered as well.  Definitely one of my favorite buffets, along side with my favorite brunch spots, Hoku’s at the Kahala Mandarin, and Orchids, at the 5 star Halekulani.

Remember Erin Brokovic?  The movie with Julia Roberts where all those people got poisioned from hexavalent chromium, and died of nasty cancerous diseases.  Hawaii is the #2 worst poisoned water in the United States.  They have found large amounts of hexavalent chromium here in Hawaii.

Hexavalent chromium is used for the production of stainless steel, textile dyes, wood preservation, leather tanning, and as anti-corrosion and conversion coatings as well as a variety of niche uses.

1. Bitch Wine Grenache

It’s a cheap wine, but the label is awesome!  The taste is a little dry and bitter for my palate, but I usually buy a box of them and pass them out for Xmas Presents.

2. Light Up Rubber Duckies

For nieces and nephews, the light up duckies are awesome!  My sister first bought them for me at Sharper Image for my little girl.  Kids love them!  You can find deals on Amazon for them as low as $2 or $3 .

3. Izakaya Hawaii: Tokkuri Tei Cooking (book)

Find it on Amazon for around $35.  Tukkuri Tei is an awesome Izakaya spot on Kapahulu!  If your Mom love’s cooking, like mine, this would be an excellent gift.

4.  Stemless Wine Glasses.

I have these glasses in my cabinet.  You can find a set of 4 for $10 on Amazon.  Or $20 for a bigger set at Macy’s.  If you want a more expensive set, you can get crystal glasses at Riedel in sets of 2 or 4, for usually about $10 per glass.  Classy and Contemporary.  These glasses are great!

As you can see Pocky comes in a variety of flavors such as chocolate, strawberry and almond.  They even come in “giant” sized.  I remember I even tried sesame, green tea, and apricot flavor.  I am sure they have a huge variety of flavors in Japan.  These are little kids favorites as they’re soft to chew on.

Ichiriki- (Nabe) and my personal recipe


Have you had nabe before?  Not to be confused with shabu shabu or hot pot.  Shabu Shabu is the same meat and vegetable ingredients except you cook it in water with a little bit of konbu (seaweed).  It is plain and light.  However, nabe is the same ingredients except with flavorful broth’s.  If you haven’t eaten at Ichiriki before, it’s most likely you haven’t had nabe, unless you’re from Japan or something.  I’ve looked all over Vegas and LA for nabe and I can’t find it ANYWHERE.  I miss Ichirki, and every time I go to Hawaii, I will make sure to stop there for a pot of shio nabe.

With dim lighting and a calm atmosphere, the traditional decor includes bamboo partitions, shoji screens and private curtained tables.  One area of the restaurant you are required to take off your shoes, a Japanese tradition, where you are seated on a sunken floor on pillow seats.  It reminds me of eating with my grandma.  They have an array of mouth watering unique pupu’s (appetizers), shabu shabu, sukiyaki, a variety of nabe, and other izakaya (bar food).   Check them out on google, there’s a reason they mostly have 5 star reviews.

My favorite appetizer couldn’t be more traditional: cucumbers, with onions, with ume paste (sour pickled plum) and katsuo flakes (dried bonito fish flakes)

Karaage chicken is my daughters favorite, with mayo and Sriracha sauce.

For lunch they have smaller portions with choice of meat, (beef) shrimp and scallops for about $12

Regular nabe is about $20.  Seafood nabe contains large tiger shrimps, scallops, and king crab legs and runs about $30.  Nabe is served with a bowl of rice on the side, and I like to order a side of udon noodles as well. The ground meat in the bamboo scoop is ground chicken and pork “tsukene”.  It’s scooped into the soup and cooked with the array of meat and veggies.

You can choose from a variety of flavors such as miso, shoyu, shio (my favorite), kim chee, pirikara (spicy), and even a new flavor, I am yet to try, light ginger broth.
They have GREAT poke too!

They also have a lounge upstairs with daily drink specials, “Ichiriki LOFT.”  Try the Shiso Mojito, a shochu-based mojito with muddled fresh shiso.

The sake selection is also good and served in bamboo boxes which enhance the flavor.

NABE RECIPE

I’ve learned how to make my own nabe broth because there is no nabe anywhere in Vegas.  First you cut the steams off the shiitake mushrooms and cut the caps in half and soak them in warm water for 15 minutes.  I bake a piece of ginger in olive oil until it is brown.   Add it to simmering water.  Drain the mushrooms, then boil shiitake mushrooms and ginger for 8 hours until the broth is golden.  I drain the mushrooms  and ginger then add shoyu, mirin (rice wine), MSG Makes everything taste better.  Some recipes use meat but mushrooms won’t spoil as fast as fish or meat.  Using so lessens the shelf life of the soup.  I like to refrigerate the soup and eat it over the next few days or use it in cooking of other recipes.    I asked them what the broth is made from Ichiriki and they said shiitake mushrooms because of peoples allergies.  If you want to cheat and don’t have time to lett it simmer all day, I like to use katsuo dashi powder.  It’s a little expensive.  probably $15 for a box of seasoning, but it is flavorful and can be ready in a few minutes.   And the box will last you years. I add ribeye, shrimp, scallops, crab legs, aburage, tofu, green onions, shiitake mushrooms, bamboo shoots, enoki mushrooms, udon noodles, carrots, mung bean clear noodles (long rice), fresh gobo (burdock), arabiki (berkshire pork sausages), kamaboko (fish cake) and make my own ground chicken and pork tsukene (meat balls) to put in it.  I never measure anything and always cook to taste, so  I can’t tell you the measurements.  That’s the best way to cook!  Then once you get it down perfect, write it down.

HELP ME FIND HIM! (in Hollywood)


OK.  I want to clarify something.  I’m not crazy.  I’m not obsessed with him.  I just really would like to be united with him.  Haven’t you ever tried to track down an old friend before?  I’m just taking a dramatic approach, and thought maybe Facebook will help me find him.

I  have less information to go by.  It was so long ago that I don’t even remember what he looks like . So here we go.  His name is Chris.  He is possibly Filipino, caucasian multi ethnicities.   He was visiting family in 2003/2004 around Xmas and New Years time in Waikiki.  He said he was from Hollywood.  Hollywood isn’t that big of a scene so Im hoping someone in Hollywood would know him.  I’m pretty sure he likes underground indie rock music and  stuff.  He had an afro, can’t forget that.  I believe he was 21 at the time so that would make between 27 and 28 now.  He was the quiet metro/emo type who wore tight jeans.   He is short, and was thin.  He is definitely unique.

If he reads this.  I was living in the Prince Hotel in Waikiki.  And we rented a moped and drove around and did all kinds of things.  I remembered you because I was writing a blog on Bogarts Cafe, and you were the one who turned me on to that spot.

Uncle Bo’s Cheap Bistro and Lounge.


My last trip to Hawaii my plane didn’t land until 9 pm.  I had to drive to Wahiawa to pick up my daughter.  by 11 pm I had to decide where to eat.  It was Zippy’s or some of the other late night asian picks downtown.  I thought a walk through China Town with my 5 year old daughter wouldn’t be a good idea.  And late night eats like Toho’s are more bar like karaoke places for adults.  And she wouldn’t enjoy Sorabol.  So I decided to take a drive to Kapahulu and eat at Uncle Bo’s, previously Auntie Pesto’s, one of my favorite spots.  Don’t be fooled if from the outside it looks like a shack, inside is a contemporary and swanky lounge.

I usually go there with my good friend, John Taitano.  It’s one of his favorite spots, especially to drink.  Behind the bar, they have a $10,000 bottle of King Louis XIV (15) on hold for him.  (retail $2k) It breaks down to $150 a shot.  The fine cognac named after the French King, Louis the XIV comes in a baccarat crystal decanter.  The first time he offered me a shot, I had bronchitis, and shouldn’t have been drinking, but I couldn’t refuse a shot of this fine cognac.  It was great, but then I got more sick later that night.

The first time I ever ate escargot was at Bo’s.  To my surprise, I love the buttery taste of escargot.  They have traditional pupu’s like poke or seared ahi, crab cakes, butter garlic clams, or spinach artichoke dip.  And their menu varies from tasty original pizza’s, pastas, steaks, and fresh fish and seafood like opah, opakapaka, and fresh sea bass.  Everything on the menu is highly affordable between $5 and $30 depending if you order some fries with your beer, or a steak and lobster dinner.  They offer a cheap price range and an array of many flavors, a taste palette for every person.

I felt a little silly walking in to Uncle Bo’s at 11 pm with my 5 year old daughter as it is a young, trendy atmosphere, and drinks are all around.  I had 1 blue moon w/ an orange, and an appetizer, and they had a Keiki menu for the little one.  She had a grilled cheese with fries.  For desert try the oreo haupia mud pie ($6), or the lychee, watermelon, or mango sorbet ($5).
